I LOVE Christmas. I love it so much that I see no reason not to celebrate it twice a year. So, each year when July rolls around, my kids and I try and do something Christmasy for Christmas in July. (Besides tuning into QVC to watch the Christmas in July specials, which I’m only SLIGHTLY embarrassed to admit that I do.) This generally involves baking some of our favorite Christmas cookies that we usually only get to enjoy at the holidays. So, I’ve decided to do a 25 Days of Christmas (in July!) Cookies series. Read along, and you’ll have more than enough cookie ideas for your holiday baking this year!
I’m kicking things off with my personal favorite Christmas cookie, Lemon Snowflakes. These are a simple recipe that I got from my friend who would make them every year for our book club cookie exchange. If she ever were to consider NOT making them, I would have to try and convince her to do otherwise, because mine never turn out quite as well as hers!

LEMON SNOWFLAKE COOKIES
1 box lemon cake mix, with pudding
2 1/4 cup Cool Whip, thawed
1 egg
powdered sugar
Mix cake mix, Cool Whip, and egg in a bowl. Drop by teaspoons into powdered sugar. Place on a cookie sheet and bake in a 350 degree oven for 10-12 minutes.

I love Christmas too and am looking forward to december already! Glad I am not the only on in the Christmas-love club!
These look yummy, I will be sure to try them out when I am next having a baking day.
Looking forward to more in this series.
