I’ve desperately been trying to eat healthier lately. Last Friday, my husband and I were having lunch together when we started talking about Chinese food. He made a comment about it being a good choice because it’s healthy. I then brought up that while SOME Chinese food is healthy, it’s also kind of known for being pretty heavy on the MSG. I then started listing many of our favorite Chinese foods that could probably be considered less than healthy, like Crab Rangoon (YUM!), Egg Rolls, Sweet & Sour Chicken, General Tso’s Chicken…
Me: “I could really go for some Chinese right about now.”
It’s moments of weakness like this that lead me to eat a little worse during the weekends than I generally do during the week. So, because of that, I’m beginning a new series called RECOVERY MONDAY. This is mostly for me, but also for anyone else who’d like to try and eat a little healthier.
Mondays will be my day to share a healthy dinner choice for you that you can make for your family. Now, these won’t be over the top health-food meals, but maybe just a twist on what you’ve already been eating, made a little bit better.
1 pound of ground turkey breast
1 onion, chopped
1 green pepper, chopped
2 cans of beans, drained (I used black beans, but any kind will work)
1 can diced tomatoes (Rotel would also work)
2 cans tomato sauce
Extra Virgin Olive Oil
salt & pepper
- Drizzle the bottom of a large pan with olive oil. Add turkey and onion and cook until turkey is completely cooked and onion is softened.
- Add diced tomatoes, and tomato sauce, and beans and cook until bubbling.
- Add green peppers and simmer for 10-15 minutes.
That’s it! You can eat it as it is, or if you want to add a bit of cheddar cheese or sour cream on top, you can…but remember, this is RECOVERY MONDAY so go easy on it! We’re all about eating healthy today……so I will NOT be adding French’s Fried Onions to the top of my turkey chili……no, I will not……
