No Bake Mint Chocolate Chip Ice Cream Cake

This weekend, like most of you, I’m sure, my family and I got together to celebrate Father’s Day.  I was in charge of making the dessert and I knew I didn’t want to heat up my kitchen with something that had to bake, so I decided to throw together this No Bake Mint Chocolate Chip Ice Cream Cake.  I’d seen recipes like it online before, but had never tried it myself, so I decided to give it a try…and luckily, it worked out well!

No Bake Mint Chocolate Chip Ice Cream Cake

Ingredients

  • 24 Mint Chocolate Chip Ice Cream Sandwiches
  • 2 jars of Smucker's Chocolate Fudge (NOT hot fudge)
  • 1 container of whipped topping
  • 2 rows of crushed mint Oreos

Instructions

  1. For this recipe, you'll need a 9x13 pan. Follow the layers below and put in your freezer to set! It's so easy, the most time consuming part is unwrapping all the sandwiches!
  2. Layer 1: 12 ice cream sandwiches (You'll have to do a little cutting and configuring!)
  3. Layer 2: chocolate fudge
  4. Layer 3: crushed Oreos
  5. Layer 4: whipped topping
  6. Layer 5: 12 ice cream sandwiches
  7. Layer 6: chocolate fudge
  8. Layer 7: crushed Oreos

My husband was a happy man when I got to try this…and his mind immediately starting buzzing with ideas of different ways we could mix up this recipe.  I have a feeling I’ll be making lots of different ice cream cakes this summer!

      Maria, I just picked mine up in the freezer aisle at my local grocery store. They’re made by Blue Bunny, along with several other flavors. Good luck!

      I found them at my local Giant — they were store brand, right next to the normal ice cream sandwiches and the Neapolitan ice cream sandwiches.

    How do you think this would be with homemade whipped cream instead of cool whip?

      Good idea! I personally prefer homemade whipped cream to Cool Whip, but I’ve never tried it with this recipe. If I were going to use homemade, I’d make sure to whip it up nice and stiff, and then get the whole thing back in the freezer as quickly as possible. Homemade whipped cream is always lighter than Cool Whip, so I’d worry that it would start to soften quickly and make a bit of a mess. But, if you prep your ingredients beforehand, you should have no problem getting this back into the freezer quickly. Let me know how it works out if you decide to give it a try!
