
Banana Bread is one of my absolute, all time favorite breads. I have been known to eat a piece or two, or more for breakfast or for a snack. My favorite recipe has always been the one my mom made when I was growing up. I used to have a copy of the recipe, but since I lost my copy a few years ago, I’ve been using other recipes trying to see if they would match up. They never have. (Why I’ve never just gotten the recipe from my mom instead of trying sub-par banana bread recipes is beyond me.)
This weekend, I wanted to make banana bread, but I was low on flour. Being too lazy to drive to the grocery store, I went to my mom’s house to borrow some…and while I was there, I snagged her recipe card! (Don’t worry, Mom, I’ll return it!)
So, now I can share with you my FAVORITE banana bread recipe ever…with a couple of my own adjustments…
Ingredients
- 1/2 cup oil
- 1 cup sugar
- 2 eggs
- 4 ripe bananas
- 2 cup flour
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1/2 tsp vanilla
- 3 tbl milk
- 1/2 cup chopped nuts, optional
Instructions
- Beat oil and sugar together.
- Add eggs and mix. Once the eggs are incorporated, add bananas. You can mash them ahead of time, but I like to add the bananas and mash them in the bowl using a potato masher...one less bowl I have to clean!
- Add remaining ingredients, adding nuts after everything has been well mixed.
- Bake in a greased 9x5x3 loaf pan at 350 for one hour.

Now….before I sign off, I’d like to share with you some of the “outtakes” from this shoot.
I’m not a tall girl, and sometimes, changing lenses on my camera seems like too much of a bother for me. (I’m starting to come across as quite a lazy person in this post!) So, I’ve been known to climb up on a stool, reach my arms up, point my camera down, and pray that a good image shows up after I click the button.
