Roasted Pumpkin Seeds

Now that October has officially arrived, it’s time to start cooking and baking all of the warm and cozy recipes that we all love so much. Today, I’m starting with a simple treat with endless possibilities.

 

I’ve made roasted pumpkin seeds before, but never ventured far past the olive oil/kosher salt realm.  Yesterday, I decided to take it a little bit farther, trying the old stand by flavors, as well as trying something new and different.  Nothing too crazy and outrageous, but something to shake it up just a little bit.

Cinnamon Sugar Pumpkin Seeds: So simple and easy, this is a tasty treat that sweet and savory lovers will be sure to love.  Spray dried pumpkin seeds with cooking spray (to cut down on the calories!) and then sprinkle cinnamon and sugar over the top.  Bake in a 300 degree oven for 40-45 minutes, or until nicely browned.  I used Sugar in the Raw, but you can use any kind you have on hand.

Spicy Pumpkin Seeds: Again, spray dried pumpkin seeds with cooking spray.  Sprinkle the seeds with garlic powder, and Frank’s Red Hot Sauce.  Bake at 300 for 40-45 minutes.
