Food: Caprese Bruschetta

It’s Friday, the happiest of all days for me! So, in honor of my great mood, I’m sharing my favorite appetizer.  Caprese Bruschetta is great to serve during the summertime when enjoying fresh tomatoes and basil from the garden.  Because it’s been raining here practically non-stop for weeks, I haven’t been able to plant my garden yet, so I had to settle for grocery store cherry tomatoes and basil.  Not ideal, but still really tasty!

This “recipe” really couldn’t be simpler. It’s basically just assembling the ingredients, and the only cooking you have to do is grilling the slices of bread…super simple.

Ingredients
cherry tomatoes, quartered
mozzarella cheese, cubed
olive oil
chopped basil
baguette, sliced
butter, for baguette
salt and pepper

Directions
1. Slice your baguette and spread both sides with butter. Grill over medium heat until browned.
2. In a bowl, add cherry tomatoes and mozzarella cheese.
3. Drizzle cherry tomatoes and mozzarella cheese with olive oil and then add chopped basil.
4. Refrigerate until ready to serve. This can be made ahead of time, as the flavor improves with time.
5. Spoon cherry tomato mixture over sliced bread and serve.

I didn’t include amounts in this because it’s really up to your preferences. I prefer more mozzarella cheese than some people may, so I used one container of cherry tomatoes and half a package of mozzarella cheese (not shredded). You can’t mess up this recipe, so tailor it to suit your preferences!

Food: Strawberry Shortcake Cupcakes

Summer is sneaking up on us rather quickly, and to me, summer is the time for strawberries…lots and lots of strawberries! That’s why I threw together these super simple Strawberry Shortcake Cupcakes that you’ll definitely want to try.  It uses fresh strawberries in a pound cake batter and is topped with an amazing whipped cream frosting, that won’t collapse on you like so many whipped cream frostings.  Pin this recipe to your summer baking boards and be sure to give this a try soon!

The only change I made was to add 10 medium-large chopped strawberries and increase the baking time by about 5 minutes.  After washing your strawberries, make sure to pat them dry so that you don’t add any unnecessary liquid to your batter.

Food: I Scream, You Scream for Ice Cream

Do you need a cup or two…or three…of coffee to get you going in the morning?

It seems a strange question for me to be asking when the title of my post obviously refers to ice cream…just stick with me, for a moment, though.

I’m definitely a coffee fan, but I especially love it when it’s loaded with lots of cream and sugar. Entertaining: A Travel Themed Tablesetting

{BEAUTY} Orange Coconut Oil Sugar Scrub

With the ever increasing popularity of coconut oil, I decided to create a sugar scrub using coconut oil rather than vegetable or canola oil.  Coconut oil is great for your skin on its own, and by adding the sugar, you add an exfoliant…an extra special treat! Keep this scrub in an airtight container near your shower and you’ll have an all natural moisturizing exfoliant on hand whenever you need it!

ORANGE COCONUT OIL SUGAR SCRUB

ingredients:
1/2 cup coconut oil, melted
1 cup sugar (I used organic sugar.)
10-12 drops of orange essential oil

instructions:
1. Pour the sugar into a large bowl and add the melted coconut oil. Mix together until incorporated.
2. Add the essential oil. It’s best to add a bit at a time to make sure that the scent isn’t overpowering.
3. Store in an airtight container.

Note: As the coconut oil changes from a liquid to a solid, the scrub will become thicker.  The steam from your shower will help it soften into a form that will make it easier to use.  Also, be careful…as I’ve learned, coconut oil can make your shower floor very slippery!
