Fall Apple Cake

This past weekend, I visited our local apple orchard, and as usual, bought WAY too many apples for us to eat.  I don’t know why I do this every year, you’d think I’d have learned by now that my family doesn’t eat tons of raw apples! So, to avoid throwing these apples away in a few days when they’ve gone soft, I’ve been baking up a storm.  Applesauce, apple cookies, and now, apple cake.

I recommend keeping this recipe on hand for your entertaining this fall.  The recipe goes together extremely quickly, and it uses grated apples, as opposed to chopped, so there’s no worries about biting into a soft cake and a not so soft piece of apple.

This cake is also not too sweet, so you can actually serve it for a breakfast, brunch, or dessert! It’s a versatile recipe that you’ll surely find a use for this fall.

{Recovery Monday} Salmon with Couscous

It’s Monday so that means it’s time for RECOVERY MONDAY, the day when I share a menu idea that tastes good and better yet, is good for you! After a weekend filled with birthday cake and cupcakes, I most certainly need a little something healthy!

Today’s recipe comes from someone you wouldn’t normally think of when thinking about healthy cooking, Paula Deen! I made this for dinner one night last week and really enjoyed it.  It puts a little something extra into your typical salmon dish…and the best part, it all went together VERY quickly!
