Ice Cream Sandwiches for Christmas in July

While scrolling through my Christmas baking Pinterest boards, I came across a recipe for Peppermint Ice Cream Sandwiches and immediately thought that these would be perfect to make for a Christmas in July celebration! Ice cream’s definitely more of a summertime treat, rather than a winter one, isn’t it?

So, I clicked on the link and was taken to Not So Humble Pie‘s site.  I was impressed with the gorgeous photography, but was a bit puzzled by the lack of any mention of peppermint ice cream.  It seems the person who originally pinned the picture, may have been a bit mistaken! No matter, though, substituting peppermint ice cream would be so simple and would make for a cool and refreshing treat during these hot, hot summer days! Peppermint ice cream is oftentimes a seasonal item that’s difficult to find in the summer months, but some brands do make it year round.  Check carefully at your local grocery store, and if you can’t find it, you can always finely crush up peppermint candies and roll the sandwiches in the candy to give you the same effect!

Peppermint Sugar, the Perfect Hostess Gift!

Yesterday, while doing some browsing around on Pinterest (This seems to be the way I open many of my posts!) I came across a photo of Peppermint Sugar, and instantly knew I wanted to make some…mainly because I already had all the necessary ingredients on hand!

All you need for Peppermint Sugar is:

Peppermints (either candy canes of starlight mints)

Sugar

Surprise, surprise, that’s it!

So, all you have to do is pull out your food processor and add your mints
